  1. Blend tofu and evaporated milk in a food processor until smooth. Add the rest of the ingredients and continue to process until creamy. You may need to scrape down the sides of the bowl a couple times. Pour into serving dishes and chill at least 4 hours

Cocktail sauce
  1. Place water and salt in a 2 quart sauce pan and bring to a boil. Add shrimp and bring back to a boil then simmer for 1 minute. Drain, cool, and peel shrimp, then chill.

  1. Mix celery and parsley together and divide between 4 bowls. Top with 1/3 cup of cocktail sauce, then shrimp and garnish with lemon wedges.

  1. Place mango nectar, agave nectar, and basil in a blender and process about one minute. Pour through a fine mesh strainer into a pitcher or bowl and whisk basil pulp to get all the liquid through. Add water and lime juice and chill.
